Kimitaka Azuma entered the world of Japanese cuisine at the age of 16. Soon, the Kyushu native left for Tokyo and later moved to Bangkok, Thailand, where he spent one year at the
Akamon Japanese Restaurant. Upon return to Japan, Kimitaka worked at a number of prestigious restaurants. The 1990s saw the boom of Japanese tourism to Australia, which created a demand for Japanese chefs. Kimitaka initially came to help open a Japanese restaurant and after a few years he opened his first own restaurant, Azuma, in Crows Nest. Since then, he has relocated to
